SUMMARY
The Beverage Manager is primarily responsible for the operations of a successful beverage department, and the successful execution of service related operations within the established operational standards. The Beverage Manager will oversee the daily activity of the Shoshone Bannock Casino/Hotel Stampede Lounge. This may include ensuring inventory control, proper equipment and supplies, staffing, quality customer service, and compliance with all food and beverage regulations.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:

  • Responsible for managing the Stampede Lounge and all beverage related operations within the Casino/Hotel including restaurant and banquet alcohol service, along with beverage host service, and offsite beverage services.
  • Maximize all sales opportunities and ensures full knowledge of all food and beverage promotions.
  • Monitor department revenue and cost controls.
  • Executes and audits beverage inventory and cost control systems and processes.
  • Analyzes and evaluates beverage department profit/ loss statements and makes recommendations as to alternative courses of action.
  • Ensures all products necessary for beverage operations are ordered and delivered in a timely fashion.
  • Ensures that all bars and beverage equipment is operated safely and with reasonable care, reporting mechanical problems to the proper department for repair. Generates and tracks, work orders as needed.
  • Maintain proper labor and beverage costs to ensure profits for the F&B department.
  • Completes all paperwork, spreadsheets, reports and payroll reporting in a timely and accurate manner: compiles all sales, generates analysis of budget goals and needs, and conducts labor analysis
  • The ability to learn and operate the POS system and train supervisors.
  • Take inventory of supplies and products.
  • Ensures that all beverage products served meet the established specifications and standards.
  • Ensures that Casino/Hotel property and departmental goals are identified, achieved and positive results are maintained.
  • Controls labor costs through effective scheduling of staff, cross-training and development of employees.
  • Tracks employee cash variances in accordance with policies and procedures.
  • Audits all cash handling and inventory tracking procedures for beverage outlets.
  • Interact with customers, and assess customers’ needs and preferences and make recommendations
  • Demonstrates a high degree of approachability to guest, and shows special recognition of frequent guests.
  • Maintains constant awareness of services, promotions, and events offered by Shoshone-Bannock Gaming/Hotel and informs guests.
  • Quick to recognize guest dissatisfaction and attempts to remedy the situation.
  • Have TIPS certification and ensure applicable staff is certified as well in an attempt to limit problems and liability related to customers' excessive drinking by taking steps such as persuading customers to stop drinking, ordering taxis or other transportation for intoxicated guests, or notifying Security or Guest Concierge.
  • Must practice and train lounge staff on proper pouring and drink mixing
  • Ensure that all lounge staff is ensuring that guests are properly identifying age with ID checks to ensure that the organization is within compliance of state and tribal laws and regulations.
  • Displays best practices in handling all aspects of employee relations including corrective action, coaching and counseling, dismissal: works cooperatively with HR to ensure a positive, harmonious and compliant work environment.
  • Welcomes guests, thanks them for their patronage, wish them luck and expresses desire to have them return.

QUALIFICATION REQUIREMENTS
:

CERTIFICATES, LICENSE, AND REGISTRATIONS
  • Must be able to submit supporting documents of education and training (High School Diploma, GED, Degree and Certificates) to support qualifications.
  • Must be able to obtain and maintain a gaming license in good standing according to the licensing rules and regulations.
  • Must be able to obtain and maintain in good standing a Driver’s License and qualify for Fleet Management coverage on company vehicles.
  • Food ServSafe, Alcohol ServSafe, and TIPS

EDUCATION AND/OR EXPERIENCE
  • A high school diploma or GED is required with four (4) years successful supervisory experience in fast paced restaurant. Minimum of five (5) years’ progressive, successful experience in a hotel and/or high volume, upscale restaurant. Must have knowledge of Food & Beverage preparation techniques, health department rules and regulations, liquor laws and regulations. Must have previous guest relations training. Required to have the following certifications; Food ServSafe, Alcohol ServSafe certified, and TIPS Training (G13)
  • Associate degree in Business Management, Marketing, or Hospitality, with additional certification through an accredited institution or organization preferred; five (5) years supervisory experience in fast paced restaurant is required and a minimum of three (3) years’ progressive, successful experience in a hotel and/or high volume, upscale restaurant. Must have knowledge of Food & Beverage preparation techniques, health department rules and regulations, liquor laws and regulations. Must have previous guest relations training. Required to have the following certifications; Food ServSafe, Alcohol ServSafe certified, and TIPS Training (G14)

SUPERVISORY DUTIES

Directly supervises all Team Members in the department.

Assists in the direct supervision of all department employees on assigned shift.

Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

SPECIAL QUALIFICATIONS:
Strong organizational skills required.

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to perform these operations using units of American money and weight measurement, volume, and distance.

Ability to apply commonsense, understanding to carry out instructions furnished in written, oral or diagram form. Ability to deal with problems involving several concrete variables. Must be able to communicate effectively in person, while on the phone, while using intercom/microphone, and in writing.
