Job Responsibilities:
- Plan, develop, organize, evaluate and manage the Food Service Department.
- Maintain written policies and procedures.
- Maintain written performance evaluations and records of Food Service Personnel.
- Interprets the department’s policies and procedures to employees, residents, visitors, government agencies, etc., as necessary.
- Train staff in departmental policies and procedures including use of equipment and supplies.
- Assume the responsibility of obtaining/maintaining material safety data sheets (MSDS) for hazardous chemicals used or stored in the department.
- Develop and maintain a file of tested standard recipes.
- Inspection and upkeep of food supply control.
- Ensure that menus are maintained and filed in accordance with standard operating procedures.
- Develop methods for determining the quality and quantity of food served.
- Handles oral and written counseling being sure documentation is done.
- Documentation of temperatures for state and local licensure.
- Review performance of workers daily giving feedback on their job.
- Ensuring that all food is delivered on time.
- Ensuring that all hot and cold food temperatures are reached.
- Ensuring that all recipes are followed.
- Ensures that all policies and procedures of the department and facility are followed daily.
- Orders supplies as needed.
- Make rounds in all work areas ensuring the quality of foods.
- Reviews employees' work daily.
- Ensures temperatures are taken daily and recorded.
- Reviews leftovers daily and makes recommendations.
- Meets with cooks and bakers ensuring their products are on time.
- Orders produce as needed.
- Orients new employees.
- Checks temperatures throughout the day.
- Checks dishes for cleanliness throughout the day.
- Ensures all breaks are taken and timely.
- Checks the quality of food and determines if it should be served.
- Ensures department chemicals are stored properly.
- Ensures all food is dated and wrapped.
- Perform other administrative duties such as completing necessary forms and paperwork.
- Submit accident and incident reports to the appropriate personnel within 24 hours of the occurrence.
- Monitor food service personnel performance.
- Make daily rounds to assure that personnel is performing required duties to assure food service procedures are being rendered to meet the needs of the facility.
- Provide leadership training that includes basic essential principles for the Food Service Department.
- Ensure that all food service personnel attend and participate in annual mandatory in-services, including safety, resident rights, etc.
- Ensure that all food service personnel are knowledgeable of the resident’s rights including the right of refusal.
- Place orders for equipment or supplies as necessary.
- Interview food suppliers.
- Develop and implement safety procedures for proper handling of equipment.
- Ensure all equipment is working properly.
- Ensure departmental personnel follow established infection control procedures.
- Ensure that the food service area is maintained in a clean and sanitary manner.
- Oversees the dining Experience in all dining rooms.
- Responsible for completing the initial and change of condition nutritional assessment with completion being the Dietitian’s job.
- Plans. Reviews, and edits menus as needed.
- Assist in preparing and planning the Food Service Department’s budget for food, equipment, supplies, and labor.
- Performs other duties as assigned.
Education Requirements and Work History Skills:
- Bachelor’s Degree in Business or Hospitality Management Preferred.
- Certified Dietary Manager (CDM) preferred.
- 2 years experience in a Supervisory Role.
