The Lead Cook plans, prepares, cooks, and serves nutritionally balanced meals for the residents of the shelters and other programs. The Lead Cook instructs and trains residents and community volunteers in meal preparation and maintains the cleanliness, organization and inventory of all kitchen and food storage areas. In coordination with the Food Service Manager, the Lead Cook is responsible for ensuring that health and safety standards are met, as well as USDA “My Plate” standards. The Lead Cook is supports Child and Adult Care Food Program (CACFP) standards, reporting, and recordkeeping for the annual audit.

Essential Functions

  • Plan, prepare, and serve meals for shelter residents and participants of other programs as assigned. Create monthly and daily menus that meet agency guidelines. Coordinate special meals.
  • Ensure all food preparation areas are clean, maintaining sanitary standards.
  • Maintain all cleanliness of storage area Complete daily, weekly and monthly cleaning schedule.
  • Complete a daily inventory of storage areas to ensure the pantry is fully stocked. Ensure that food items in freezers and refrigerators are covered and labeled appropriately.
  • Supervise the setup, take down, and cleanup of the dining area and food delivery areas.
  • Deliver meals prepared at Caritas Center to other CCDSR sites
  • Supervise and train volunteers who assist with food preparation, serving, and clean up. Plan kitchen tasks for residents and community volunteers to assist with kitchen operation.
  • Oversee food ordering. Manage all incoming food donations and food orders.
  • Meet and maintain all criteria associated with CACFP grant funding, including menu creation, weekly meal counts, recordkeeping, and annual audit process.
  • Perform job functions in line with CCDSR Policies and Procedure Maintain a professional appearance and presence.
  • Participate in training to assure best practice standards. Support quality improvement effort
  • Support the Mission, Vision, and Values of Catholic Charities in the performance of all essential job functions and responsibilities.

  • Work with Diocese of Santa Rosa and local parishes as appropriate and requested.

Education, Experience, and Skills Required

  • High School diploma or High School Equivalency (HSE), minimum of one to three year’s prior food service experience and one year of kitchen supervisory experience required; experience in a scale commercial setting, associate’s degree in food and beverage management
  • Successful completion of the Department of Public Health Food Safety Manager test and possession of Food Handler Card within two months of hire required.
  • Demonstrate proficient use of a variety of kitchen equipment, including broilers, grills, slicers, grinders, and blenders.
  • Prior experience, interest, and a good understanding of service delivery with the homeless population, and sensitivity to issues surrounding homelessness, substance abuse, mental illness, and/or physical handicaps.
  • Strong organizational and communication skills. Ability to work independently and in a team setting.
  • Ability to provide excellent customer service to all program participants.
  • Ability to work closely with other employees to ensure a positive, constructive environment within the program or department, and throughout the agency;
  • Passion and enthusiasm for the mission of CCDSR and its clients.
  • Bilingual (English/Spanish) preferred but not required.
  • Possess valid driver's license; at least state required minimum of auto insurance.
  • Must pass DOJ background clearance (fingerprinting) in accordance with the Diocese of Santa Rosa’s policies, prior to start of employment.
  • Must be able to lift, move, and adjust objects up to 50 lbs.
